Garlic (Allium sativum) is one of the oldest cultivated plants in the world and has been used for over 5,000 years both as a spice and in herbal medicine. The bulb belongs to the onion family and originally comes from Central Asia. Its characteristic smell and taste are due to sulphur-containing compounds, particularly allicin, which is formed by enzymatic conversion when the cloves are crushed.
