Pineapple
Bromelain is a term for a group of proteolytic enzymes from plants of the family Bromeliaceae. It occurs in particularly high concentrations in the stem and fruit of the pineapple plant (Ananas comosus). As proteases, these enzymes help the plant break down proteins and naturally act as a defence against pests. In dietary supplements, bromelain is often measured in GDU (Gelatin Dissolving Units).
