Coriander (Coriandrum sativum) is one of the oldest spice plants in the world – finds show it was used in ancient Egypt over 3,000 years ago. The plant belongs to the umbellifer family and originates from the eastern Mediterranean region. Both the fresh leaves and the dried seeds are used, and their flavour profiles differ markedly: the leaves have a fresh, citrus-like aroma, while the seeds taste warm and spicy with a slightly sweet note. Its constituents include essential oils, particularly linalool in the seeds, as well as flavonoids and coumarins.
