Safflower oil is extracted from the seeds of the safflower and is one of the oils highest in linoleic acid, a polyunsaturated omega-6 fatty acid. The cold-pressed oil has a golden-yellow colour and a mild, nutty flavour.
Because of its high content of unsaturated fatty acids, safflower oil should not be exposed to high heat and is therefore particularly suitable for salads, dips and cold dishes. The oil is rich in vitamin E, which helps protect cells from oxidative stress.
