Saffron
Safran (Crocus sativus) gilt als das teuerste Gewürz der Welt – für ein Kilogramm werden rund 150.000 bis 200.000 Blüten benötigt, deren Narben von Hand geerntet werden. Die Krokusart stammt ursprünglich aus Vorderasien und wird heute vor allem im Iran, in Spanien und in Marokko angebaut. Safran verdankt seine intensiv goldgelbe Farbe dem Carotinoid Crocin, sein charakteristisches Aroma dem Aldehyd Safranal und seinen leicht bitteren Geschmack dem Picrocrocin. Bereits in der Antike wurde Safran als Gewürz, Farbstoff und in der Pflanzenkunde geschätzt. In der Nahrungsergänzung wird Safran als standardisierter Extrakt in Kapselform angeboten.
