Sesam oil
Sesame oil is obtained from the seeds of the sesame plant (Sesamum indicum) and is one of the oldest edible oils in the world. It is rich in monounsaturated and polyunsaturated fatty acids as well as in sesamol and sesamin, two characteristic lignans. Light sesame oil is pressed from unroasted seeds and has a mild, nutty flavour – dark sesame oil from roasted seeds is noticeably more aromatic and imparts its characteristic flavour, especially to Asian dishes. In the Ayurvedic tradition, sesame oil also holds an established place as a massage oil.
