Description
How the power of the Andes reaches the table
Organic gelatinised Maca powder from Unimedica is a plant-based source of protein and high in fibre. Maca has been regarded as strengthening since Inca times. It is still enjoyed in South America as a porridge or in baked goods and has meanwhile made its way into kitchens around the world. As a powder, Maca can enrich a wide range of dishes and drinks with its satiating fibre, proteins and other valuable constituents.
What exactly is Maca powder?
Organic gelatinised Maca powder from Unimedica is derived from the yellow maca root. More precisely, it is not a root but the part of the plant between the root tip and the cotyledons. The maca plant grows in the high Andes of Peru. There the plant, a member of the cress family, is exposed to extreme weather conditions. These conditions, however, also ensure that the plant thrives on mineral-rich soils without pesticides and fertilisers. Only during sowing is the barren soil enriched with guano (bird manure).
Why is the maca powder gelatinised?
Mechanical gelatinisation of maca makes maca powder particularly easy to use. It is more easily processed by the body, it dissolves completely in water and it tastes sweeter. During pre-cooking and the subsequent extrusion and milling, indigestible starch compounds are broken down and pungent substances (mustard oil glycosides) are boiled out. The gel is milder than raw maca.
How is maca gel produced?
Maca is cleaned in Peru immediately after manual harvest and blanched for 1 to 3 minutes at 95 to 100 degrees Celsius. After drying, the maca is finely milled in a special mechanical process. This gelatinisation is a purely mechanical processing method without the use of chemicals.
