The black salt is heated for several hours in heavy earthenware vessels according to an ancient Ayurvedic process together with Haritaki and Amla fruits. In the process, valuable constituents of the fruits combine with the salt to form reddish-brown, sulphur-smelling crystals that, according to Ayurveda, stimulate Agni.
Kala Namak – as the black salt is also called – has a smoky, distinctive note reminiscent of the taste and smell of the also sulphur-containing asafoetida. In Indian cuisine it is mainly used for dal dishes, fruit salads, chutneys and raitas.
