The manufacturer states:
Light spelt flour, type 630, is made from approximately 78% of the whole spelt grain. Only the coarse bran fractions are sieved out during milling. The grain is milled into flour in our mill. Both the grain and the flour are thoroughly examined in the laboratory.
Usage note:
For bread, bread rolls, biscuits, cakes, pizza dough, sauces, etc., for all recipes that call for wheat flour type 550 or type 405 you can use spelt flour type 630.
