Cold-pressing freshly harvested flaxseed yields the much-appreciated, omega-3-rich flaxseed oil. The press cake still contains about 12% of this oil as well as roughly one third plant protein, few carbohydrates, but 40% fibre.
The flaxseed meal also has a very good water‑binding capacity and is therefore suitable as an ingredient for bread doughs and baked goods of all kinds. As it contains no sugar, it is an ideal addition to a reduced‑carbohydrate (low‑carb) diet and is good for supplying the body with the necessary fibre.
Flaxseed meal, also called linseed meal, is suitable for making bread, fine baked goods, and as an addition to muesli.
Tip: When baking, 10–20% of the flour can be replaced with flaxseed meal. As it has a good water‑binding capacity, simply increase the amount of liquid in the recipe accordingly. Store tightly closed, in a cool, dark place.
