The manufacturer states:
Flower bread - inspired by the flowers of buckwheat. Vegan, gluten-free and kosher. Ekibio's philosophy also includes producing flower breads without yeast, eggs, fats, dairy products or flavourings. Thus the flower bread ("Le Pain des Fleurs") is not only well suited to people with gluten intolerance. The dough for the crispbread is toasted for several seconds during processing at a high temperature of 300 to 400°C. This creates its special crunchy texture.
