Attention to detail!
Gourmet raw food - this book by Sofia Rab and Michael Brönnimann contains exactly what the title promises! Both trained with Michelin-starred chef Matthew Kenney in California. Their enthusiasm for living food has resulted in their own company in Switzerland, Naturkostbar. Here, food is produced according to the rules of raw food (no heating above 42 degrees to preserve the valuable enzymes and heat-sensitive vitamins). vitamins). Michael Brönnimann is an endurance athlete and specialises in balanced, vegan nutrition. Like many other raw foodists, Sofia Rab found her way to this form of nutrition through health problems and shares this approach with her family. The two authors have gathered a wealth of experience in the field of raw vegan nutrition. In their book, they are now keen to pass on their own enthusiasm for the subject. For newcomers, the basic equipment and terms are explained and enzymes, superfoods, healthy or even healing vegetable oils are introduced. In my opinion, this information is just the right amount to give you an overview. The special feature of the extensive recipe section is definitely the beautiful photos! They emphasise the gourmet quality of the dishes, which not only focus on the balance of flavour, but also on an appealing look.
