The fermented vanilla pod contains, in addition to sugars, fats and minerals, more than 130 flavour compounds. The characteristic vanilla flavour is largely due to vanillin. In the fresh fruit vanillin is bound to sugar molecules. Only through fermentation is this bond released, allowing the vanilla aroma to fully develop. Aromatic substances, also known as secondary plant metabolites, occur only in trace amounts in the vanilla pod. They shape the complex flavour of genuine Bourbon vanilla.
