Verjus royal is the juice of green, i.e. not yet ripe, Kaiserstuhl grapes from organic farming.
This is also behind the French-derived name; "vert" (green) "jus" (juice). The "green juice" itself is rather light yellow. The "green" refers to the ripeness of the grapes.
Verjus royal is a non-alcoholic seasoning made from grapes with no additives. Therefore verjus tastes sour. And that is as it should be, because it is used to gently acidify dishes and beverages. Its acidity is by no means harsh or caustic; rather fruity and delicate.
Verjus was already used in the Middle Ages to refine sauces, for curing fish & meat and for salad dressings. It is also excellent for zesty cocktails.
