Rosemary is an evergreen shrub, an ancient medicinal and culinary herb native to the Mediterranean region, preferring calcareous, sunny sites. Rosemary is a typical plant of the garrigue and macchia, but is also cultivated as a culinary herb. In antiquity rosemary was dedicated to Aphrodite and symbolised fidelity. Rosemary was an ingredient of the famous "Hungary Water", one of the oldest perfumes. It is part of the spice blend "Herbes de Provence" and an important raw material for perfumery, cosmetics and pharmaceuticals.
