Rinse the millet grains in hot water. Cook with 3–4 times their volume of water, vegetable stock or milk for 7–10 minutes over medium heat. Then leave to absorb the liquid over low heat for about 15 minutes.

Soak for 24 hours. Then strain. Cover with a little water. Boil. Swells very quickly. Very tasty, easily digestible and invigorating. Great in case of gluten sensitivity.
