Milk thistle, also called lady's thistle or silver thistle, was already cultivated in medieval gardens. The oil cold-pressed from its seeds is rich in polyunsaturated fatty acids. Replacing saturated fatty acids with polyunsaturated fatty acids in the diet can help maintain a normal blood cholesterol level. Milk thistle oil is rich in vitamin E.
With its mild, nutty flavour, milk thistle oil adds an interesting note to salads, dressings and dips and also enhances yoghurt and smoothies. It can also be used pure as a treatment course. To protect its valuable constituents, the oil should be used exclusively in cold preparations.
