The gold of the Allgäu meadows: Unimedica organic ghee is made from clarified butter (butterfat) derived from the hay milk of Allgäu pasture cows. Ghee has a long tradition in Indian cuisine. Its nutty flavour makes it a suitable alternative to butter. As ghee can be heated up to 210 °C, it is also suitable for cooking at high temperatures. Description
The gold of the Allgäu meadows for a natural organic butter indulgence
Allgäu Organic Ghee is a specialty from the heart of Germany. It is clarified butter (similar to drawn butter or anhydrous milk fat) made from hay milk from Allgäu cows in premium organic quality. Ghee has a nutty, delicate butter flavour with a slight caramel note and can be used as a butter alternative.
It can be heated up to 210 °C and, thanks to its relatively high smoke point, is also suitable for cooking at high temperatures. Because no water is present, the fat does not splutter when heated. Ghee naturally contains very little trans fat and no new trans fats or other harmful substances form up to this temperature.
Ghee is made according to a traditional Ayurvedic recipe. Through a special melting and cooking process, the butter is freed of water and the majority of the milk protein. Minimal residues of milk protein may, however, remain, so it is not suitable for people with a milk protein allergy. The ghee contains less than 0.1 g lactose per 100 g and will keep for several months without refrigeration.
The benefits of the organic ghee from Allgäu pastureland
The quality of Allgäu Organic Ghee starts with the cows. The hay milk used for production comes from cows kept in organic farming in the Allgäu, i.e. the cattle graze fresh green grass and wild herbs on pasture and are not given productivity-enhancing feeds or genetically modified feed.
The summer butter used in production contains milk from cows on grass feeding and pasture — entirely without silage feeding. Made and bottled by hand in Germany according to Ayurvedic tradition, Allgäu Ghee meets the highest quality standards and is a natural indulgence. The ghee is also gluten-free and non-GM.
What is ghee used for?
In Indian cuisine, ghee holds a similar status to olive oil in southern Europe.
Ghee is used for frying, sautéing, baking and for anything that is heated in the kitchen. Spices and herbs release their aroma better in hot fat — in Indian cooking they are therefore first toasted in ghee before being used in various dishes. Ghee is also delightful on bread as a butter alternative.
Use of ghee
Ghee has a long history in traditional Indian cuisine and has been mentioned in Ayurvedic texts for 2,500 years. It remains an important component of Indian recipes today.
