Gyokuro with a mild, sweet aroma.
For the Morimoto Gyokuro, the Morimoto couple shade their tea bushes of the two cultivars Yutaka Midori and Oku Midori. The flavours of both cultivars combine into a beautifully intense green yet mild composition. While the fresh greenness of the spring harvest gives Morimoto Gyokuro its vigour, the tea gains its mild, sweet aroma from several weeks' shading of the tea bushes. As with high-quality sencha, only the tender leaves and leaf stalks are picked for Morimoto Gyokuro.
The green tea for Gyokuro is grown in full shade for about three weeks, which limits the formation of tannins and bitter compounds. In this way Gyokuro develops its mild aroma.
