Good and at the same time simple, low-fat, inexpensive dishes
In this book by mother and daughter, we find timeless fat-free recipes for people who want to do something good for their heart or who already suffer from heart disease. At the same time, the book is very suitable for all people who want to lose weight healthily and safely without harming their health. No special kitchen appliances are needed (!) and the ingredients are all available in supermarkets or at a well-stocked vegetable market. What does the diet in this book look like? No meat, no dairy products, no oil and no nuts, little salt and sweeteners. "But what else can you eat?" you ask yourself. "A delicious and colourful abundance of vegetables, plenty of fruit, lots of pulses and cereal grains full of fibre, nutrients and antioxidants ' excellent food for the heart and the health of your whole body!" is the authors' answer. Firstly, they describe why this diet protects the blood vessels and the heart. Studies on cultures with plant-based diets show that strokes and heart disease are rare there, Dr Esselstyn is certain that a 'heart-safe diet' is possible and would save our health system a lot of money if more people ate a plant-based and low-fat diet. And honestly, the recipes are great! I've been looking for recipes like these for a long time, simple and really inexpensive vegan family recipes without any frills. The book contains healthy vegan classics such as three-tier lasagne, but also original family recipes such as kale tart with blueberry glaze or beetroot burgers with grilled pineapple. I really liked the oat waffles and the 'Mango magic with raspberry writing' is very appealing. We have already eaten the giant bean soup and many sauces and think they were quick to prepare, inexpensive and delicious. During his time as a general practitioner at the Cleveland Clinic, Dr Caldwell Esselstyn began a small scientific study with 18 patients with heart disease in 1985. Some of them were so ill that they had already been sent home to die. However, after an immediate change in their diet, they flourished and were still healthy after twelve years and had remained faithful to the low-fat, purely plant-based diet. 20 years later, those who stuck to it were still doing well. Some are now over 80 years old. Evelyn, now 88, one of the first patients, says: "Nobody thought I would survive. Today I am healthier than most of my friends." This plant-based diet is extreme at first glance, some might think. But it is also extreme to undergo heart surgery and have veins from your legs implanted in your heart. This raises the question of how to make health a habit. Oats are also very important, and fortunately we've been eating them for breakfast for years anyway. The book is clearly organised, with an introduction followed by breakfast, lunch: soups, hummus, sauces and salsa recipes, starters and side dishes, salads, salad dressings and main courses and desserts. It always states how many people the recipes are for and the ingredients are clearly listed as they are needed. All good! The book also has a silk ribbon, which is helpful when using it. Conclusion: absolute recommendation for this 6-star book, also a good way for healthy young people!

The book offers a certain contrast to The End of All Diets by Joel Fuhrmann, in that fat and nuts are also allowed. Both are based on beans and various types of cabbage, as well as daily salads and lots of colourful vegetables on the plate. It was important for me to compare the different diets in order to recognise the values and find my own way. I enjoy trying out the new recipes.

Tough but helpful
The Eselstyn family takes a very extreme and consistent approach to nutrition. But their enthusiasm and enjoyment is infectious. The positive approach to the new cuisine is convincing. And finally, I can say for myself that I felt much better in a very short time after following her recipes. However, my intestines responded to this change by producing an enormous amount of gas. In future, I will add a little olive oil to my salad to hopefully remedy this problem. Perhaps everyone should experiment a little at this point. The book is very appealing and the path is certainly the right one.

Eat what your heart desires - my recommendation
Ann Crile & Jane Esselstyn published their book "The Prevent and Reverse Heart Disease Cookbook - Over 125 Delicious, Life-Changing, Plant-Based Recipes" in 2014. The German edition published by us in 2016 is entitled "Essen was das Herz begehrt - Vorbeugung und Heilung von Herzerkrankungen mit 125 herzgesunden veganen Rezepten". The recipes in this wonderful book deliver what they promise, they are tasty and a very good basis for - not only - heart health - if we take care of our fields and support our farmers, really check imported fruit and vegetables and do not allow objectionable fruit and vegetables to be sold. Dr Caldwell B. Esselstyn wrote the foreword to this book. He has conducted over 20 years of nutritional studies with great success. Most of his patients still follow his recommendations today. We cannot thank him enough for his work. I wish this book every success and hope that many people will stand up for clean agriculture out of love for our earth, for ourselves, for all people and living beings.

Eating what is really good for our body
I had previously bought the book "Food against heart attacks" by Caldwell Esselstyn (Ann's husband). In addition to the evidence-based explanation of why food can make us ill or healthy again, this book already contains some great recipes. But I wanted even more recipes, as we want to optimise our vegan lifestyle more and more in order to grow old healthily, just like the Esselstyns. Just great, so simple, very inspiring!

Clean the coronary vessels
Will it work? In any case, I follow the recommendations in the book very closely. I completely changed my diet. I have a follow-up appointment at the cardiology department in December 2025. Whether a positive change in the condition of my coronary arteries is already noticeable is questionable. Until then... Patience then and only then will there be more stars.
