Die Artischocke (Cynara scolymus) ist ein ausdauernder Korbblütler und stammt ursprünglich aus dem Mittelmeerraum. Die Hüllblätter der dickfleischigen Blüten sind als Blütengemüse beliebt. Die Artischocke wurde zur Arzneipflanze des Jahres 2003 gekürt. Sie enthält den Bitterstoff Cynarin.
