How green tea leaves becomes black tea
Black tea is created by natural fermentation of the leaves of the tea plant. After the harvest the leaves are dried and intensively rolled. This breaks the cell walls of the tea leaves, releasing the enzymes necessary for oxidation. The leaves thereby turn black as the oxidation intensifies, creating a full-bodied flavour with numerous nuances of taste.
