Taurine is a non-proteinogenic and sulphur-containing amino acid that occurs naturally in our daily food as well as in the human body. Non-proteinogenic means that, in contrast to other amino acids, it is not incorporated in proteins. Taurine is created by the body from methionine and cysteine. Yet the human body can synthesize it rather poorly. Only around 50 to 125 mg are created each day.

Taurine occurs freely (uncombined) in the cells. Between 30 and 70 g taurine is found in the body of a person weighing around 70 kilos. It can be found in high concentrations in the muscles, brain, heart and blood.

Taurine was isolated in 1827 by Leopold Gmelin and Friedrich Tiedemann from the gall bladder of an ox, and was called “gallen-asparagin”. At that time these chemists were investigating the digestion process in cattle.

The term “taurine” comes from the Latin for the gall bladder of a bull, “fel tauri”, or rather from the Greek “tauros” for “bull”. It was first mentioned in the literature in 1838.

Occurrence of taurine in food
Good sources of taurine are crabs (260 mg/100 g), tuna (70 mg/100 g), fillet of pork (50 mg/100 g), fillet of lamb (47 mg/100 g), fillet of beef (36 mg/100 g), chicken (34 mg/100 g), liver (30 mg/100 g) and milk (6 mg/100 g).
Since taurine is mainly found in animal foods, it may make sense to take a nutritional supplement for this amino acid if you are vegetarian or vegan.

Functions of taurine in the body
Taurine is involved in many metabolic functions in the body, including those of the central nervous system, heart and muscles. In addition it is significant for the flow of bile.
